It is apparent that anyone who wants to lose weight should avoid a lot of wheat products. This is often bad news to people who love pancakes. There are other ways of getting your beloved cheesy leftover mashed potato pancakes and this recipe is just what you need.
- 3 cupschilled leftover mashed potatoes
- 2/3 cupshredded cheddar cheese
- 2 Tablespoonschopped scallions, green and white parts
- 1egg, lightly beaten
- 3 Tablespoonsall-purpose flour
- 1/2 cupall-purpose flour
- Vegetable oil, for pan-frying
- Sour cream, for serving
The first step is to mix and stir the main ingredients that include three tablespoons of flour, scallions, egg, cheese and mashed potatoes. You should then divide the resulting mixture into twelve portions using your hands. The next step is to roll the different portions into compact balls and then make them into the normal pancake shape with a 1/2 inch thickness. Once that is done, you should pour the other 1/2 cup of flour into a dish and dredge your pancakes one by one.
Heat the vegetable oil and you can measure it in three to four tablespoons in a sauté pan. Ensure you are using medium heat and that the oil has coated the surface of the pan.
You can start frying your pancakes in batches of five until they are crispy and golden brown. This should be on both sides and should take three to four minutes. Once done place them in a plate lined with paper towel then sprinkle some salt on them.
